Toad In The Hole

1 hour

Serves 4

There is no better comfort food than the traditional toad in the hole. It's a simple recipe, but when you get it right it can lift your mood on the most depressing of days. This recipe comes from my nan who used to make it just for that reason - this is her cheer-you-up food of choice.

Toad In The Hole

  • 250g sausages

  • 1 Tbsp oil

  • 100g plain flour

  • 1 large egg

  • 250ml milk

  • 1 onion, sliced

  • Pinch mustard powder

  • Salt

  • Preheat oven to 220°c (Gas 7)

  • Put the sausages and onion in an ovenproof dish. Add the oil and place in the oven for 10 - 15 minutes until the sausage has started to brown /

  • Whilst the sausages are cooking, put the flour, egg, salt, mustard powder and milk in a bowl and mix until smooth

  • When the sausages are cooked, quickly remove the sausages from the oven and add pour the batter into the dish before the oil can cool. Return to the oven quickly

  • Bake for 40 minutes until the batter is well risen and golden brown.
