This is the perfect salad to eat in the garden when the sun is out. I came across this recipe in Cyprus, but it originates in Lebanon. If you want something healthy and packed full of flavour, this is the choice for you.

Loubia bi zeit

ingridients

  • 750g (1 lb) green beans

  • 1 large onion, roughly chopped

  • 4 cloves garlic, sliced

  • 4-5 Tbsp olive oil

  • 2 Tbsp tomato puree

  • Salt and pepper

Method

  • Top and tail the string beans and cut into 2 or 3 pieces

  • Fry the onion and garlic over a medium-low heat for five minutes or until just beginning to colour

  • Add the beans to the pan and fry for two minutes, stirring continuously

  • Add water to the pan until it just covers the mixture

  • Simmer until tender and add the tomato puree. Mix well and simmer until the beans are tender and the liquid has reduced

  • Serve
