Italian Roasted White Fish

This seafood starter is a delicious, light dish that would be perfect for a light meal with friends on the patio or as a starter for a dinner party. It's also a wonderful dish for anyone who wants to eat healthier but still wants to keep some flavour in their life. The key to getting this meal perfect is to buy fresh fish from your local fishmonger or supermarket. Any white fish will do, but I think cod is my favourite here. I like to serve this dish in the middle of the table with serving cutlery so that people can take what they like - it's more social and much more authentic.

Italian Roasted White Fish

ingridients

  • 4 fillets of white fish, skin on

  • 1 Tbsp olive oil

  • 500g cherry tomatoes

  • 50g black olives, pitted

  • 25g pine nuts

  • Handful fresh basil, chopped

Method

  • Heat oven to 200c (Gas 6)

  • Take the fish fillets with the skin on and season with salt and pepper

  • Heat the olive oil in a pan over medium heat. Cook the fillets, skin side down, for 2-3 minutes or until just crisp

  • Remove from the pan and add to a roasting dish, skin side down

  • Cut the cherry tomatoes in half and scatter around the fish do the same with the olives and pine nuts then season

  • Bake in the oven for 12-15 minutes or until the fish is tender. Remove from the oven and sprinkle the basil on top.
