Homemade Prawn Crackers

They're the centerpiece of any Indian takeaway, and a favourite at a family buffet, but this recipe will tell you how to make prawn crackers from scratch. This recipe comes from an Indian neighbour I had in my first year of university and let me tell you it tastes so much better than anything you will get from a takeaway. Yeah it takes a bit more effort, but trust me it is so worth it.

Homemade Prawn Crackers

  • 250g prepared prawns

  •  250g tapioca flour 

  • Vegetable oil for deep frying 

  • Salt and pepper

Method

  • Using a blender, puree the prawns into a smooth paste. Transfer the paste into a bowl and mix in the flour. Season lightly and mix into a stiff dough

  • Divide the dough into three equal portions. Roll each into a sausage shape and set on some greaseproof paper or plate

  • Steam the rolls for 40-45 minutes on a high heat

  • Leave the rolls to cool and wrap in a clean town or cling film. Refrigerate until firm

  • Using a sharp knife, slice the rolls into thin circles and allow them to dry out slightly

  • Get your oil in a large wok or deep fryer. Add your batter circles in batches and fry until crisp. Remove and drain on kitchen paper.

  • serve hot or cold
