Danish Style Cod

I first tried this fabulous fish dish in a small cafe on the coast owned by a lovely Danish couple. This fish in this recipe is melt in the mouth and is complimented in both texture and taste by the bacon. I prefer to use cod here, but any white-oily fish will do. I like to serve it with some boiled new potatoes and broccoli, but it's a dish that will go well with most things

Danish Style Cod

ingridients

  • 100g chopped streaky bacon

  • 100g mushrooms

  • 100g frozen peas

  • 4 x 150g cod fillets

  • 25g butter

  • Salt and Pepper

Method

  • Heat your oven to 180°c (Gas4)

  • Grease a shallow ovenproof dish with butter. Arrange the bacon on the bottom of the dish

  • Top the bacon with the mushrooms and peas

  • Season the cod and place on top of the bacon and vegetables

  • Add a knob of butter to the top of each piece of cod. Cover and bake for 20 minutes

  • Uncover the dish and bake for a further 10 minutes
