Carrot and Coriander Soup

Carrot and coriander soup is one of the most popular soups in the UK. It has all the warming flavour of a chicken or cauliflower soup, but packs in more nutrients than some others. This is a great recipe for cold days or if you're feeling down.

Carrot and Coriander Soup

ingridients

  • 175g onion, diced

  • 500g butter

  • 500g carrot, sliced

  • 1 garlic clove, finely chopped

  • 2 pints vegetable stock

  • 2 tsp caster sugar

  • 150 ml whipping cream

  • 2 Tbsp chopped coriander

  • Salt and Pepper

Method

  • In a saucepan, sweat the onions in the butter until soft (around 5 mins)

  • Add the carrots to the pan and cook, stirring lightly for around 5 minutes

  • Add the garlic and stock to the pan. Season with salt, pepper and sugar. Half cover the pan and boil slowly for about 30 minutes

  • Pour the contents of the pan into a blender and blitz to a puree. Return to the pan, heat through and add the cream and coriander.
