Asparagus and Chorizo Salad

This interesting salad recipe was the brainchild of the owner of a small cafe in Bath. I was a bit dubious about it at first, but it was one of our best selling menu items. This refreshing asparagus salad is a refreshing and delicious salad that combines some unusual flavour combinations that will blow your guests away at a dinner party or be a treat you can enjoy on your own.

Asparagus and Chorizo Salad

ingridients

  • 250g asparagus

  •  2 chorizo sausages, sliced into bite-size pieces

  •  3 Tbsp olive oil 

  • 1 Tbsp sherry vinegar

  • 1 Tbsp wholegrain mustard 

  • 2 slices of white bread, cut into cubes

  •  a handful of rocket leaves

Method

  • Bring a pan of salted water to a boil. Add the asparagus and cook for about 10 minutes or until just going tender. Drain the water and leave to cool

  • Grill the chorizo under a hot grill until just beginning to colour (around 5 minutes) and leave to cool on a piece of kitchen paper

  • Combine 2 Tbsp of the olive oil with sherry vinegar and mustard. Add salt and pepper to taste

  • Heat the remaining oil in a pan over medium heat. Add the bread cubes and fry until golden, stirring constantly to avoid burning

  • Put the rocket leaves on the plate and top with the asparagus and chorizo. Add the croutons on top and drizzle with the dressing

  • Serve
